Simple roasted pumpkin soup

Chop up a pumpkin, rub with olive oil and salt and pepper and pop into your cast iron pan to roast away in the oven.  You can add onion to roast with the pumpkin or just sauté it in a saucepan.  When pumpkin is soft with golden roasted edges, blend with the onion, chicken stock, a little bit of milk or cream and season with salt and pepper.  Add herbs like parsley or chives if you like.
