Upside down cake

Cast iron pans make excellent vessels for going from stovetop to oven.  For this delicious upside down cake based on David Lebovitz's recipe, we've used fresh mirabelle plums and frozen cherries but you can pretty much use any fruit you like.  http://www.davidlebovitz.com/2008/07/upside-down-cake/  The cast iron pan beautifully caramelizes the brown sugar and butter and it oozes all through the fruit!

After caramalising sugar and butter in the pan on the stovetop, pop in the fruit.  In this cake we are using mirabelle plums and frozen cherries.

After pouring the batter over the fruit, the cake is baked in the oven...
