It's a question we get almost daily, and the simple answer is: You can definitely achieve a naturally non-stick surface on your iron pan! Below, we have outlined our top tips and tricks to achieve the perfect naturally non-stick surface on your AUS-ION™ pans, right from day one.
Start with a seasoned pan: Our AUS-ION™ pans come pre-seasoned for you, with our Quenched finish. This provides a strong, resilient seasoning foundation that allows you to start cooking right away.
Use good fat: To prevent sticking, use a good fat like butter, oil, or lard. The fat should be heated in the pan before adding any food. This creates a layer of protection between the food and the pan.
Manage your heat carefully: Iron pans are highly conductive and can get very hot quickly. Start with a lower temperature than you would initially think to use, and then gradually increase as needed. In most cases, medium heat will be your new high. If you need a searing steak or crispy skin fish, turn up the heat once your pan is warm to achieve your desired finish.
Avoid overcrowding the pan: Overcrowding the pan with food can cause it to steam and prevent it from developing a crispy, non-stick surface. It is better to cook food in batches, giving each piece enough space to cook evenly.
