'RAW' and 'SATIN' refers to the surface finish (this is not a coating).
The difference is the finish of the product at the manufacturing level. RAW means the pan is left RAW post manufacturing (similar to french carbon steel pans) and has a fine layer of natural beeswax applied to protect it from rust and SATIN is shot-peened and pre-seasoned with a layer of rice bran oil post manufacturing.
Thus SATIN is textured (much like cast iron) though with seasoning the performance of the pans ultimately is the same. SATIN was developed to create an efficiency in seasoning especially for cooks new to iron. RAW is smoother sooner, whereas SATIN takes a little more time though too will be smooth.
With seasoning and cooking, both finishes perform the same, the finish makes no difference to the durability of the pan.
