The terms RAW, SATIN & Quenched™ refer to the surface finish - it is not a coating.
RAW: just traditional raw iron, with no pre-seasoning or surface blasting. Coated in natural beeswax for rust protection, ready for your seasoning and cooking. However, our new to Kickstarter Raw AUS-ION Lightning pans, will not be wax coated - they will be just dipped in oil to prevent short-term rust and ready for seasoning.
The difference is the finish of the product at the manufacturing level. RAW means the pan is left raw post-manufacturing (similar to french carbon steel pans) and has a fine layer of natural beeswax applied to protect it from rust and SATIN is shot-peened and pre-seasoned with a layer of rice bran oil post-manufacturing. And Quenched™ has been sandblasted and seasoned, for ultimate convenience!
Ultimately, whichever finish you choose, they will all look and perform similarly once well seasoned and used. RAW is smoother sooner, whereas SATIN takes a little more time though too will be smooth.
