“Bulgogi is a delicious grilled meat that is great seared on an insanely hot iron pan — or, if you really want that authentic smokey flavour, grilled over fire in a flaming skillet. The marinade is definitely best done the day before and left to develop, but if you want to pull it together in a hurry, it is surprisingly good with as little as half an hour of marinading, so don’t be discouraged by time. Additionally, before you consider discarding the leftover ingredients, try frying them in a wok with precooked rice for a great base to the meal.”

There's nothing quite like Bulgogi grilled steak. The flavours of Bulgogi are wonderfully harnessed in a naturally seasoned, iron pan. This dish cooks up fabulously in one of our larger AUS-ION™ skillets: like our AUS-ION™ 31cm XHD Frypan.
700g (1 1∕2 lb) thinly sliced beef
1∕ 2 tablespoon of white sesame seeds
Bulgogi Marinade:
4 tablespoons of Korean soy sauce
2 tablespoons of sesame oil
3 tablespoons of brown sugar
8 cloves of garlic, crushed
1∕2 Korean pear, grated
1 carrot, shaved into thin slices
3 green spring onions, chopped
1∕2 onion
Freshly ground black pepper
1. Combine the ingredients from the marinade in a mixing bowl.
2. Add the thinly sliced beef to the bowl of marinade and turn over to evenly coat the meat. Set aside for at least 30 minutes, or leave in the fridge overnight to develop more flavour.
3. In a small skillet (our AUS-ION™ 20cm is ideal), gently heat sesame seeds until they are evenly browned and set aside.
4. Preheat a large AUS-ION™ skillet over medium heat until just smoking.
5. Sear the meat over high heat in a single layer with space between each piece, turning over half way through. Keep the heat on the pan high enough to rapidly boil away any moisture that runs from the meat (don’t overcrowd the pan if using a smaller skillet, cooking in multiple batches is preferrable).
6. If using a flaming skillet, grill it over very high heat, ensuring the meat is well and truly licked by the flame.
7. When serving, sprinkle with the toasted sesame seeds prepared earlier.
