Baking Tray & Roasting Pan Seasoning and Care Guide

IMPORTANT: Do not stovetop season your Baking Trays and Roasting Pans.

Our Baking Trays and Roasting Pans are recommended for the below heat sources only, and are NOT suitable for stovetop use! For more information, see our FAQs below.


 

Please note that the following information only applies to our AUS-ION™ Baking Trays. Our nöni™ Baking Trays do not require seasoning. 

Our AUS-ION™ Baking Trays and Roasting Pans have been seasoned and are ready to use, straight out of the box! Remember, this is NOT a synthetic coating - this is real, natural seasoning that will continue to change and improve as you cook/bake. 

We recommend greasing your trays/pans, as this will continue to improve your seasoning foundation. If at any time you wish to re-season your Baking Tray or Roasting Pan, just follow the steps below. 

 

How to re-season your AUS-ION Baking Tray or Roasting Pan:

1.     Preheat your tray/pan in the oven to 90°C for 15 minutes. Carefully remove from the oven (take care, it’ll be HOT!), and place on a heat-resistant surface. 

2.     With a lint-free cloth or tough paper towel (avoid microfibre as it is synthetic and made from plastic - consider an old cotton t-shirt, tea towel or even a pillowcase), wipe a very thin layer of oil over the entire tray/pan. We recommend rice bran oil, though any cooking oil or fat with a high smoke point can be used for seasoning. You only want the lightest layer possible - wipe on, then wipe off. The tray/pan should look dry, like there is no oil left on the surface. Too much oil is one of the most common causes of weak, flaking, sticky or problematic seasoning.

3.     Increase the oven temperature to 250°C. Place the tray/pan upside down in the oven for 1.5 - 2 hours. Switch the oven off and without opening the door, leave the tray/pan to cool in the oven for at least 30 minutes, or ideally overnight.

4.     Repeat the oven seasoning process 1-3 times to establish a strong seasoning foundation for corrosion resistance. You will notice your tray/pan start to darken in colour.

5.     Start baking and roasting! We recommend greasing the tray/pan with a light layer of butter or oil.

 

A well-seasoned Baking Tray or Roasting Pan will be black in colour, though often patchy in reality. Seasoning will change overtime, and will continue to get better the more you cook. Looks aren’t important - our pans are built for performance!

 

 

Cleaning & Care

Just like our AUS-ION™ pans, we recommend cleaning your Baking Trays and Roasting Pans under hot running water, and drying thoroughly - preferably in a warm oven. For any tough, stuck-on bits, lightly scrub with a brush, steel wool, or scraper. To maintain your seasoning, avoid using detergents.

Cooking Tips

1.     We recommend greasing your tray/pan prior to use, especially whilst you're getting familiar with it and your seasoning is young. Seasoning will continue to improve with baking/roasting. 

2.     As our trays/pans are very conductive, there is no need to preheat prior to use (though you may wish to for extra crispy pizza bases!) and things may cook faster than what you're used to, so keep an eye on your cooking times.

3.     If you have cooked something acidic and it has stripped your seasoning, simply re-season as per the above instructions in Step 2: Oven Seasoning.  

 

 

FAQs

 

Why is my Baking Tray/Roasting Pan patchy? 

Our Quenched seasoning is real, natural seasoning. It is not a synthetic coating. It will change and evolve depending on what/how you cook. The beauty of seasoned iron is that it's forever renewable! What's important is how it cooks, not how it looks.

 

Why is my food sticking? 

There are many variables and factors at play when it comes to cooking - temperature, cooking time, if you greased your tray/pan, the texture and wetness of your food, your seasoning, etc. Our iron Baking Trays and Roasting Pans are extremely conductive, and don't have a synthetic non-stick coating, so it may take some adjusting and tweaks to find what works best for your cooking needs.

 

Can I use my Roasting Pan on the stovetop? 

Yes, with a mindful approach! If you have just pulled your Roasting Pan out of the hot oven and want to deglaze the pan to make a sauce or gravy on the stove, this will likely be okay as the metal is already hot and evenly expanded – so long as you use a low heat and your biggest element. However, if you are putting a cold Roasting Pan on a hot stovetop (particularly where the element is small), it could result in uneven movement in the base. If you have a large element option on your stove and pre-heat on a very low setting, you may find it's okay. Please note, warping is not covered under our warranty.

The heat on a stovetop is concentrated to the shape and size of the element, and often contains hot spots. An oven, on the other hand, doesn't have this problem. In an oven cooking environment (which also includes over the fire and in a BBQ or pizza oven), the heat is evenly applied to the Roasting Pan from all angles, which allows the entire pan to heat up and the metal to expand at an even rate.

When cooking on a stovetop, the heat is concentrated to the base of the pan. We always recommend appropriately matching the size of your burner, to the size of your pan, to ensure even heating. If the element is smaller than the pan's base (which would often be the case with our Roasting Pans given their large base), and care isn't taken to heat the pan slowly to allow the steel to expand and the heat to disperse, it could cause uneven movement in the base. This is why we've generally steered away from recommending them for stovetop use. However, if you have a large enough element and take care to heat slowly, then it's unlikely to be an issue.

With all that said, it's your pan - use it how it best serves you. Just keep the above in mind. ❤️
