Are your pans non stick?

 

Just like old cast iron, you season our AUS-ION™ pans to create your own natural, healthy, forever renewable non-stick. Seasoned iron is the only known natural, non-toxic, non-stick cooking surface. A healthy cooking surface that cannot be scratched, gets better with cooking and time, and will never need to be replaced! All of our AUS-ION™ products come with our Quenched™ finish, which means we've lightened the seasoning load and done the initial oven seasoning for you. What's the difference between AUS-ION™ and nöni™? 

 

AUS-ION™ is made from clean Australian iron. Just like old cast iron, you season AUS-ION™ to build and maintain your own healthy, naturally non-stick surface. AUS-ION™ is perfect for everyday oil/fat-based frying, grilling, roasting, stir-frying etc. Whilst you can cook anything in AUS-ION™, acidic foods and liquids can erode the seasoning. Though the beauty of seasoned iron is it's forever renewable!

Our nöni™ range is made from ferritic, non-nickel stainless steel. nöni™ is very low maintenance as it does not require seasoning - cooks like iron, cleans like stainless! Like all stainless, nöni™ is not considered 'non-stick' though can work well with the right balance of heat and fat. nöni™ is ideal for all liquid boiling, slow cooking, acidic sauces, and is very low maintenance.

AUS-ION™ made from pure Australian iron is ideal for all of your everyday frying needs such as shallow frying, grilling - eggs, meat, veggies etc. They are great for pancakes/crepes, browning and caramelisation...especially proteins such as meats. It's also excellent for baking - i.e. pies, cakes, pizza, and bread. Roast vegetables, stir fry, fried rice, frittata, omelettes, and toasted sandwiches are also perfect for AUS-ION™.

nöni™ stainless steel is best used for wet foods and acidic foods such as any slow cooking, pasta, rice, poached eggs, boiled or steamed vegetables, sauces, curries, soups, stocks, jams, paella, risotto, casseroles etc. It's also great for baking in. The bonus - our nöni™ lids are unique. Each skillet-lid alone is a high-performance shallow skillet, crepe pan, baking tray, or griddle for all kinds of frying and grilling.  nöni™ cookware - cooks like iron, cleans like stainless! No seasoning required, so is super low maintenance.

All of our cookware is wrought from a single sheet (no joins, screws or rivets), suitable for all heat sources - stovetop (including induction), oven, BBQ, even campfire, and is healthy, non toxic, and multi-century durable.

 

Are your AUS-ION pans iron or steel?

Our pans are made of steel, to be more precise, they are composed of an alloy known as steel. This alloy is primarily comprised of 99.97% iron and 0.03% carbon, resulting in durable and highly conductive cookware. We do use the terminology steel and iron across of website and materials.

 

Where do I start/ how do I choose?

Want to buy your first piece of Solidteknics cookware, but not sure where to start or which pan is the right one for you? Some key things to consider are:

Follow the below steps to help you decide which Solid pan (material, style and size) is the perfect one to suit your individual needs.

 

STEP ONE

Learn about our cookware ranges. There are so many benefits to both our iron and stainless steel ranges. We recommend reading more about our AUS-ION™ and nöni™ to get an idea of what each one is, and what cooking styles they are best suited for.

Just remember: There are no hard and fast rules. Ultimately, both our AUS-ION™ and our nöni™ cookware can be used for any food, and over time you'll determine for yourself what works best for you.

 

STEP TWO

What do you like to cook? Are you usually frying up meats and veggies, or do you mainly cook sauces and liquids, and boil pasta and rice?

AUS-ION™ is ideal for your everyday frying, baking, and roasting needs - think eggs, pancakes, baking bread, fried rice, frittatas, etc.

nöni™ is ideal for wet and acidic cooking - think rice, pasta, steamed/boiled veggies, sauces, curries, etc. It’s also good for baking.

 

STEP THREE

What cookware do you currently own? Are there any specific pieces that you want to replace, or are there any gaps you are looking to fill in your current cookware collection? What size of cookware do you find yourself reaching for most often?

If you are wanting to replace your old non-stick pan for a new everyday workhorse frypan, then our AUS-ION™/nöni™ 26cm Frypans will be perfect for 2-4 people, and our 30cm/31cm for 4+ people.

If you already have frypans and saucepans, but are wanting something you can stir fry and deep fry in, then one of our Woks may be what you are looking for.

STEP FOUR

How many people are you cooking for? Is it just you and a partner, or are you cooking for a small army? Do you like to cook in large batches for meal prepping, or do you enjoy cooking just enough for a new meal each night?

If you just want a small pan that you can fry a couple of eggs or pancakes on in the mornings, then our AUS-ION™ 24cm Crepe Pan or our AUS-ION™/nöni™ 22cm Sauteuse would be great choices.

If you're cooking meals for a family of 6 every week, then our nöni™ 6L Rondeau Set may be what you’re after.

 

STEP FIVE

What is your budget? Equivalent pans are often a bit cheaper in our AUS-ION™ range, as nöni™ costs more to produce.

For example, our AUS-ION™ 26cm Frypan retails for $219.95, while our nöni™ 26cm Frypan retails for $279.95. This is important to factor in when determining the best Solid pan for you.

 

If you’re just starting out, here are some basic cookware pieces ideal for any kitchen. They’re our most popular sizes, used by both professionals and home cooks:

Workhorse Saucepans = nöni™ 2.5L & 4.5L saucepans with skillet-lids.

Dual-Handle Pots = nöni™ 6L  Rondeau with 33cm Skillet Lid – great for soups, stock, pasta, slow cooking, sauces and big batch cooking.

Our lids are unique - each skillet lid alone is a high-performance shallow skillet, crepe pan, baking tray, or griddle for all kinds of frying and grilling. 

Workhorse Frypans = AUS-ION™ 22cm, 26cm & 30cm frypans. A frypan has sloped sides that taper in at the bottom, and can be used for anything from eggs, omelettes, meat, frittatas, pancakes, pies, even cakes. These pans conduct magnificently and will get you that perfect steak sear! We also have frypans available in our nöni™ range, if your style of cooking is mostly wet, saucy and/or acidic.

Which cookware style is best for you?

With so many different styles available, it can be overwhelming to know which pans are best for you and your cooking needs. To help you decide, we've outlined what each style is best suited for!

 

How do I match my stovetop element to my pan?

To get the best out of your pan, it's important to match the size of your stovetop element to the size of your pan's base. The below graphic demonstrates how to determine if your element size is well-matched to the size of your pan. 

 

 

What's the difference between AUS-ION™wrought iron & cast iron?

 

We know you're probably thinking... "isn't wrought iron extinct?" The nostalgic old puddled and hand-wrought form popular a century ago for gates and railings, etc. is extinct. However this is much better, new iron. Clean Australian iron, machine wrought (worked) into final seamless pan shape from flat. Wrought iron, modernised, optimised and revolutionised for a new era in cookware.

Cast iron, on the other hand, is melted down (and often mixed with other metals) and then poured into a mould. 

AUS-ION™ is half the weight and even more durable than cast iron as it can not crack if dropped. AUS-ION™ also has a higher iron content (yes, really) and is, therefore, more conductive.  Furthermore,  AUS-ION™ has the optimal thermal mass for cooking plus very fast heating, with much less energy input than cast iron. Despite being considerably lighter than cast iron,  AUS-ION™ retains plenty of thermal mass to take even the biggest steaks without losing temperature! 

 

 

Our wrought iron is more conductive, because it is very low carbon (though they aren't considered 'carbon steel' either). Our C is <0.06%, while cast is typically 3-4%. Huge difference, metallurgically. 

Our pans are MUCH lighter: around half the weight for big pans. Much better for sore wrists/arms!

This lower weight is no problem for cooking, and a huge advantage in lower energy costs. Our lower thermal mass is still plenty to sear the biggest steaks without cooling and stewing, like cheap thin pans.

Cast iron cracks, but wrought iron will never crack.

That's why cast pans usually have short fat handles that get screaming hot: that is necessary to avoid cracking during mass production of castings. Ours are long and vented and cool enough to lift of stove with bare hands.

Our pans come with a multi century warranty and cast pans don't, unfortunately they usually crack over the long run, or quickly if dropped or thermal shocked.

Looking in the museums around Europe: very little cast iron has survived, but lots of wrought has!

 

What are your pans made from? 

 

Both ranges AUS-ION™ and nöni™ are made from a single monobloc sheet with no rivets, joins or welds. There are no synthetic coatings or clad layers of any kind (and there never will be). 

Our AUS-ION™ is made from clean, locally sourced Australian iron sheet, the thickness of iron will depend on the piece, our woks and Lightning series are made using a 2.5mm thick steel, our everyday workhorse pans are made from a 3mm steel and our heavy-duty BIG pans are made using 4mm steel.

Our nöni™ range is made from ferritic, non-nickel, stainless steel that is custom made for us in Germany and Finland.

Yes, there is chromium in our  nöni™ range, like all stainless, but the key is our stainless is classed as 'non-nickel', which is the potential problem element based on our research. All our pans are perfect for gas, induction, or any heat source. In short, our stainless pans are called, in full, 'CoSSNoNi', for 'Conductive Seamless Stainless Non-Nickel' ('nöni' for short!). Our nöni™ pans are formed into shape from one solid sheet of 3mm ferritic non-Nickel stainless steel (only very tiny trace amounts of Nickel: 0.6% maximum), which is nearly twice as conductive as regular Nickel-based stainless steels (eg. '18-10 stainless' means 18% Chromium and 10% Nickel for standard stainless steel). Ours is far less then this. 

Our iron and ferritic stainless are thermally very conductive, and also highly compatible with induction, without the need for clad/ply layers.

 

Why are you so expensive?

Our dedication to quality and sustainability through durability comes with a higher price than imported, mass-produced alternatives. While we understand our cookware isn’t inexpensive, it is meticulously crafted to ensure durability and longevity and is proudly made in Sydney.

We prioritise local employment and innovate health-conscious and durable products, that aim to heavily reduce disposable cookware waste. 

As a manufacturer, we sell direct to keep pricing as low as possible. While our prices reflect these values, they also contribute to our local economy and environmental efforts. We know our pricing won’t align with everyone and are thankful for your support regardless.

 

 

What's the difference between the 30cm and 31cm AUS-ION

 

The difference between the two sizing options really lies in your specific cooking load requirements.

For example, the 30cm AUS-ION pan is one of our most popular pans and is perfect for all of your everyday cooking needs. (With a metal thickness of 3mm, it's also lighter than our 31cm frypan).

In comparison, our 31cm AUS-ION™ frypan is extra heavy duty! It's an extremely solid, 4mm thick pan with a 3.5L capacity. This size is therefore deeper and thicker than the AUS-ION™ 30cm Frypan and is designed to withstand even the toughest cooking environments!

Our larger companions are great for cooking big loads for the whole family to enjoy. They hold maximum conductivity to maintain even cooking, making them perfect for cooking multiple steaks or eggs simultaneously.

Regardless of the size of AUS-ION, you’ll be given a strong, resilient foundation to work with that is designed to last generations. These workhorse pans are highly conductive and suitable for all heat sources (including induction!).

All AUS-ION™ pans come seasoned for you with our Quenched finish. We recommend purchasing both sizes to add versatility in the kitchen. 

 

 

AUS-ION™ - what's the difference between RAW, SATIN & Quenched™?

 

AUS-ION™ Raw and Satin finishes have been discontinued. All of our AUS-ION™ range is now sold seasoned with our Quenched finish. 

Our newest, and ultimate AUS-ION™ Quenched™ finish has been sandblasted then seasoned for you, using rice bran oil and our patented quenching process, for ultimate convenience. Ready to cook with straight out of the box, it's never been easier! Launched on Kickstarter in early 2021, our AUS-ION™ Quenched™ range is now available to purchase!  To shop AUS-ION™ Quenched™, click HERE.

The AUS-ION™ RAW finish is just traditional bare/raw iron, with no pre-seasoning or surface blasting. Coated in natural beeswax for rust protection, it's ready for your seasoning and cooking. This finish is no longer available to purchase.

The AUS-ION™ Satin finish results from shot-peening a raw pan, and then lightly pre-seasoning it with natural rice bran oil in a commercial oven (which changes the colour from silver to gold-ish), to make it easier for your additional at-home seasoning (as there are no anti-corrosion coatings to remove). Safe to cook with 'out of the bag,' though we do recommend further seasoning before use, via a combination of oven and stovetop seasoning techniques for best results. The Satin finish has been discontinued and is no longer available to purchase.

 

 

Can your cookware be used on induction?

 

All AUS-ION™ (iron) and nöni™ (ferritic stainless steel) cookware is suitable for induction and can be used across any heat source in both professional and home kitchens. Our pans are so tough, you can take them camping or use them in pizza or charcoal ovens! Our lids are unique in that each skillet-lid is also a high-performance skillet, crepe pan, baking tray, or griddle for all kinds of frying and grilling.

 

 

N.B. Induction cooktops can put high, almost instantaneous heat. Just as you should never put a hot pan under cold water, you should not expose a cold pan to intense, instantaneous stovetop heat (ovens are fine as the pan heats uniformly). We recommend warming on a lower temperature before turning up the heat, and as our cookware is so conductive, never using anything higher than a medium setting with induction. It's also important to correctly match the size of the burner to the pan.

 

Why isn't the base of my pan flat?

 

Common with all good quality iron and steel pans, Solidteknics pans are designed with a carefully engineered concave to compensate for expansion/contraction when heated. LEARN MORE

 

Have I 'ruined' my pan?

 

The short answer? No, you haven't 'ruined' your pan! The wonderful thing about our AUS-ION™ and nöni™ cookware is that they are practically indestructible, so there isn't much you could do that would truly 'ruin' your pan, that you couldn't fix! 

Have you completely scratched up the surface of your pan or accidentally stripped your seasoning right back to raw? Our iron pans have a natural seasoning, not a synthetic coating, so you can simply give it a quick stovetop or oven season and just keep cooking.

Did you accidentally heat your pan too fast and cause uneven movement in the base of your pan? A bit of pressure in the right spot will put the concave right back in the base.

Have you accidentally backed over your pan with a ute/truck or a tractor? Just use a rubber mallet to bang the pan and handle back into shape, give it a clean and season, and you can get back to cooking!

Essentially, if anything happens to your pan, assume that it can be fixed, because it most likely can be! That's the beautiful thing about wrought iron and stainless steel, it's durable enough that it won't crack if you drop it, yet malleable enough that it can be reformed into shape if any accidents happen! And seasoning is forever renewable, so can always be fixed. Are patches and scratches on my iron cookware unsafe?

Patches and scratches are perfectly okay on your iron pans! ❤️ ⁠

Many people who are new to cooking with seasoned iron get concerned when their AUS-ION pans begin to lose their dark, even colour. This concern would be warranted if you were cooking on a synthetic-coated non-stick pan. ⁠

However, uneven patches and scratches are very normal (and actually expected) for naturally seasoned wrought iron! ⁠They are designed to be lifelong workhorses, after all.⁠

With no synthetic coatings, our AUS-ION pans are simply raw iron that has been seasoned with oil. Their appearance will continue to change and develop the more you cook, and while they may not be winning any beauty contests, we think they have a certain natural beauty in their own right. ⁠

What matters most is how your pans cook, not how they look!⁠

 

My pan arrived scratched! and/or I scratched my pan, help!

 

Firstly, don't worry! See below for advice for AUS-ION™ cookware: 

RAW finish: our AUS-ION™ RAW pans are finished raw - what that means is they are raw/bare material coated in a light layer of oil or beeswax to protect them in transit from oxidisation. There aren't any synthetic coatings, thus any scratches are superficial and a result of machine 'witness' markings, which we like, as those marks tell an honest story of the way that pan was manufactured. As soon as you commence the seasoning process, your pans will take on their own appearance and gradually darken and get better with age and use. 

Satin finish: Like AUS-ION™ RAW pans, our AUS-ION™ Satin pans are made from clean iron that has shot-peened then twice seasoned with rice bran oil to help begin the seasoning process and protect the pans from corrosion prior to sale. This is not a synthetic coating, this is just natural seasoning on raw iron. Blemishes/machine marks are very normal and will soon disappear as you begin seasoning and your pan changes in appearance, becoming darker. 

QUENCHED™ finish: Just like our AUS-ION™ Satin pans, AUS-ION™ QUENCHED™ pans also begin life 'in the raw,' so to speak. They have the ultimate seasoning start via our patented Quench seasoning process, which eliminates the need for oven seasoning at home. However, the dark colour is not a synthetic, toxic or artificially applied coating.  Unlike with Teflon™ and other synthetic and/or short wearing coatings, a scratch is just a scratch. With iron cookware you don't need to worry about scratches; there are no health or performance implications when it comes to scratches on iron pans with natural oil based seasoning. In addition, natural seasoning can always be renewed (replaced/repaired) if necessary via our easy to follow seasoning instructions. 

If your pan arrives with a scratch, we assure you that scratch will soon be forgotten once you start cooking. It will disappear with further seasoning and cooking, and is a great reminder that your pan is healthy and toxin free - you will never need to replace your pan due to a simple scratch or failed coating!  Rejoice in knowing that you can heat your pan without releasing any toxins, and use whatever tools you prefer to cook with (including metal), without worrying about damaging or needing to replace your pan due to a simple scratch.

Ultimately, pans will never be perfect in appearance unless they are synthetically or artificially coated and all such coatings don't last and are often toxic in one way or another. Over the lifetime of your pan/s, there will be many scratches, scuffs and scrapes by spatulas, knives, etc.  You can have complete comfort knowing that these are just superficial scratches in your natural seasoning, not scratches in synthetic, toxic, or short-lived coatings that mean the pan needs to be replaced.  Natural seasoning on iron cookware is forever renewable and our pans are made tough, to be workhorses for generations to come, not short-term beauty queens. 

 

What is pitting, and why can it occur on stainless steel cookware?

Pitting can be normal in stainless steel cookware, though rest assured if your nöni™ pan develops some pitting, it is still perfectly safe to use! Pitting can occur due to a few different reasons, all of which are variables and something a manufacturer can't control (e.g. the cooking method, minerals in liquids, water pH, etc). As our nöni™ pans are non-nickel and contain lower levels of chromium than other generic stainless steel pans, there is less of a protective 'layer' on the surface. 

If you notice some pitting in your nöni™ pans, it is likely due to one of the following reasons...

Sodium chloride/Salt: This is the most common culprit of pitting. If you add coarse salt to your water before it's boiling, some of the salt will likely settle to the bottom of the pan, reacting with the chromium in the pan and causing pitting to occur. "But I didn't add any salt to my cooking!" Well, the salt or chloride may not actually be getting added by you! If you are using hard water (see below) when cooking, this typically contains a higher amount of chloride that may react with the chromium in your pan in a similar way as if you had added salt to your cooking water.

Hard water: If you live in a region where the plumbed water is quite hard (i.e. has chemicals and minerals added) and you're using this water in your cooking or when cleaning your nöni™ pans, you may have a slightly higher likelihood of pitting. 

Environment: Humid or salty environments can sometimes cause pitting to occur in your nöni™ pans. If you live in a humid climate, or close to a beach, you may find that pitting can occur more easily. Likewise, if you are regularly cleaning your nöni™ pans in the dishwasher and not opening the door to release the steam once it's done, pitting may be more likely to occur. 

As mentioned above, your pan is perfectly fine and is still safe to use if pitting occurs, and will not lose its function or durability. The chromium in our stainless steel will quickly form a new layer of chromium oxide over the pits, making your pot as corrosion-resistant as before.

Do the handles get hot?

 

Our long skillet handles are designed to dissipate heat through the vented neck gaps, making them fine to handle during normal stovetop cooking. However, the handle will get hot if you put your pan in the oven!  Get in the habit of throwing an oven-mitt or tea towel over the handle if you've just removed your pan from the oven. 

Our dual handled woks and pans will get hot, as the short loop handles used on those models don't have enough distance between the pan and grip to allow the heat to dissipate.

 

Do your pans have lids?

Yes! Some of our pans have a matching skillet-lid. Our skillet lids come in highly convenient sets that will help you make the most of your cooking.

As a company who are at the forefront of innovative cookware, our visionary, founder and product development engineer, Mark Henry is always looking ahead at versatile way to improve how we cook. Mark carefully considered adding lids to our range. After some thought, he came to a logical conclusion: Why make a lid when you can make a skillet that doubles as a lid? It was then that matching skillet-lids were born!

Our lids are unique in that they are high-performance skillets/pans/griddles in their own right. 

For our pans that don't have a matching skillet-lid, they are made to be standard size so you should be able to find a lid either in your kitchen, online, or from a good kitchenware store to fit. Check out our reputable stockists in your area.

Please note that our style of lid does not 'seal' shut and it's important to hold both sets of handles when moving the pan around to avoid the lid slipping.

Length: measured from the tip of the handle to the opposite rim of the pan

Diameter: measured from the inner top rim, across the centre of the pan, to the opposite inner rim

What utensils should I use?

 

Unlike synthetic coated pans, you don’t have to worry about scratching AUS-ION™. This means you can use any kind of cooking utensil in your AUS-ION™ pan (metal, woods, plastic, silicon). That said, we recommend taking the more sustainable route and opting for metal (this is also the most hygienic option).

Is your cookware non-toxic?

 

AUS-ION™ wrought iron (mild or very low-carbon steel) is made using clean Australian iron sheet, and our nöni™ range is made from premium non-nickel, ferritic steel that's custom made for us Germany (unfortunately no stainless steel is made in Australia). 

Ferritic stainless steel is considered to be the healthiest type of stainless steel as it doesn't contain nickel.

While all metals can leach some elements, ours are safe for most people. Iron that's free of heavy metals has been supported by experts as the cleanest metal for centuries. Tests consistently show that the iron and stainless steel we use contains zero heavy metals. Like all manufacturers, we do not make those tests public to protect our IP (factories and materials). Why do iron pans sometimes emit a slight metallic taste?

 

If you're experiencing a metallic taste from cooking with iron, it's likely due to improper seasoning or maintenance of your pan. 

  • New or Unseasoned Pans: If your seasoning is young or hasn't been properly maintained, the surface will be more reactive, especially with acidic foods like tomatoes or vinegar. This can cause the pan to release a metallic taste.
  • Rust: Improper drying or storage can lead to rust, which may affect the flavour during cooking. But don't worry—this can be easily fixed with a good scrub and stovetop seasoning.

How do we avoid these problems?

Cook regularly with fats and oils, and season your pan when needed. Dry it thoroughly after use and store it in a dry place to prevent rust and ensure a smooth surface.

The great news? Iron pans are forever renewable. Properly seasoned, they offer the healthiest, natural, non-stick cooking surface, ensuring excellent performance and taste.

Does iron leach into food? 

 

There is no difference between our pans and other iron pans in terms of iron migration. Iron pans all transfer similar amounts of iron under similar conditions. We’re not biochemists, but there have been quite detailed studies that show that well-seasoned iron leaches almost no iron into food, and the small amount that does leach causes no harm to the body. Cooking acidic sauces in bare iron does leach more iron, but that would rarely happen, and would never happen if following our seasoning instructions. That's also one reason we developed our nöni™ non-nickel stainless range - for the types of cooking that aren't so well suited to iron cookware (eg. boiling liquids, acidic and/or slow simmering foods). We recommend further research for anyone who is in need of iron supplementation or looking to avoid it.

Experts are unanimous on one important matter: seasoned iron pans are the healthiest way to achieve a low-stick cooking surface!

Why do white marks appear on stainless steel?

These are watermarks, and they're very normal and have nothing to do with the pan itself. Water spots or chalky white spots occur in many homes due to the minerals in tap water. In nearly all cases, this white residue is from calcium and magnesium-containing minerals found in tap water. (See example below).

The minerals build up on pans when water boils, evaporates, and are left behind. These white spots are not permanent and can easily be removed with a little vinegar and bi-carb soda.

Removing these water spots is a simple process. All you need to do is dampen the surface of the pot or pan, rub it with a moist sponge sprinkled with baking soda, and rinse as usual.

To clean more stubborn chalky white spots (which can result from calcium buildup in the water), bring a solution of 1:3 vinegar: water to a boil in the pan, let it cool, and then wash and dry as usual.

You can avoid these white water spots by drying your pans after use or using good filtered water.

What is Flagship vs Lightning?

Our nöni™ Lightning and AUS-ION Lightning ranges are designed to eliminate every non-essential cost and feature a reduced pan thickness, making them lighter to handle. 

For AUS-ION lightning we reduced the pan thickness from 3mm to 2.5mm, simplified the handle vents, removed the base stamp operation, and the costly CNC machine-rounded edges are now only on the handle where it's needed, not the pan rim. Just like our Flagship AUS-ION range, they’re 100% made in Australia from a single sheet of clean Aussie iron.

Similarly, for nöni™ Lightning, we reduced the pan thickness from 3mm to 2mm. The nöni™ Lightning range is wrought from a single sheet of new 2mm thick conductive, non-nickel stainless steel material (and like our Flagship nöni™ range, they're 100% made in Australia). The nöni™ Lightning range is also 30% lighter than our Flagship nöni™ range, and even more conductive. Both versions of our nöni™ range are made of non-nickel, stainless steel and are very low maintenance.

All of our cookware is wrought from a single sheet (no joins, screws or rivets). Our nöni™ and AUS-ION Flagship and Lightning ranges are suitable for all heat sources - stovetop (including induction), oven, BBQ, (and even campfire). They are also healthy, non-toxic, and multi-century durable.

What's the difference between our AUS-ION Lightning Series and flagship range?

 

We launched the initial Lightning series in 2020 in response to the difficult times we were all faced with due to the global Covid-19 pandemic. Our Lightning pans were designed to be no-frills, maximum value. By eliminating every non-essential cost and cutting our margins to the bone, we were able to significantly reduce the price, without compromising on the durability or the performance of the pan.

Specifically, we reduced the Lightning pan thickness from 3mm to 2.5mm, simplified the handle vents, removed the base stamp operation, and the costly CNC machine-rounded edges are now only on the handle where it's needed, not the pan rim.

These were intended to be a one-off, though as they’ve been so popular, we decided this was the perfect range to offer to Myer.

Just like our flagship AUS-ION range, they’re 100% made in Australia from a single sheet of clean Aussie iron. Suitable for all heat sources (including induction) and come with a multi-century warranty.

Help! My pan doesn't fit in my oven! 

 

All of our pans are designed to fit in standard 600mm ovens, however, internal dimensions of ovens can vary significantly between brands. Our full product dimensions and specifications are provided in our product listings, and we always recommend measuring your oven first. In saying that, there is a handy trick! Try spinning your pan around, so the handle is facing a back corner. This often creates enough space to enable you to shut the oven door.

As for oven seasoning (if required for the pan you have), the pan doesn't need to sit flat. If needed, it can be propped up against a side in order to make it fit; the most important thing is that the pan is upside down. Always experiment with placement before your oven is hot!

 

Our nöni™ 31cm Sauteuse in a standard 600mm oven. The oven door will not shut if the handle is sticking outwards, though spin it around so the handle is in the back corner and it fits perfectly!

 

How should I hold my pan?

Our frypans are specially engineered with long, ergonomically designed, vented handles. We do find that it's more natural and comfortable to hold our long pan handles from the top, resting your forearm along the top of the handle, rather than holding it from underneath like you would with cheap plastic-handled pans. It may seem a bit unnatural if you're used to holding light, disposable cookware, so this method of holding your pan can take a bit of time to get used to. Though, once you do it a few times, it will become second nature!

We ship worldwide from our online store (with a few exceptions). Shipping will be calculated at checkout when you enter your country. Please note, all import taxes/duties are the responsibility of the customer. Some countries such as the EU and UK are known to have high import duties/taxes. 

 

Important: Before Use

 

Oven burn risk: Take care when handling any hot metal pan, especially when taking from oven, and use oven mitts to protect your hands and trivets to protect surfaces. After removing from an oven we recommend leaving the heat sock, mitt or towel over the handle to remind yourself the handle may still be hot.

Stove burn risk: our longer skillet handles are designed to resist heat transfer up the handle, and this works so successfully that hand heat protection is normally not required. This, of course, does not apply to ovens, or when the handle exposed to direct heat from underneath (such as over a campfire/coals or burner). The effective 'cool handle' effect does not work for other pan models with short handles, such as the AUS-ION™ 21cm Deep Pot, 30cm dual-handled wok or 35cm BIGGA Skillet, or our nöni™ 3L or 6L Rondeaus.

Thermal shock - warping and cracking: Beware that wrought iron pans can be warped and cast iron has been known to crack due to thermal shock from heating too quickly on electric or induction cooktops set on max. Warm your pan slowly on a lower heat before increasing to higher heat, and you may never need the high heat you think you need, because AUS-ION™ is so conductive. Warping is more likely to happen with induction cooktops where quality varies wildly and heat can go from zero to extreme in a second. Please read about 'Induction warping' below. 

Induction warping: Our iron pans are so efficient with induction that heat can become too concentrated in the middle, particularly when the induction ring size is smaller than the pan size. Because our AUS-ION™ wrought iron pans are so efficient on induction, there is rarely any need to go above medium power settings. Small rings and high power can certainly warp any pan, and though ours are tougher than most, it is possible. The issues can be exaggerated with high power or very centrally-focused induction. Like other situations of 'abuse', warped pans from overheating on induction are not covered under our warranty.

Thermal shock from cooling too quickly: Never expose a hot pan to cold water. Thermal shock can warp steel pans, no matter how thick and tough. Let your pan cool a little before washing. Like other situations of 'abuse', warped or cracked pans from thermal shock or overheating on induction are not covered under our warranty.

Lid security: Please note that our style of the lid does not seal, so please be careful. When moving the pan, hold both sets of handles to secure the lid and prevent it from sliding. This is particularly important when removing hot from the oven. We recommend removing the lid first and setting aside, before removing the base. 

Oil stains: Keep in mind that if your pan is oily on the base it may stain porous surfaces.

My TSS is scraping my pan:

The TSS has been designed specifically to work with our AUS-ION™ iron range and suits our nöni™ stainless steel range too. Scraping is important for seasoned iron to remove stuck on food while the pan is still hot. Most difficulties with sticking on seasoning arise from not being aware that all the fine black bumps are carbonised food, and not seasoning, and those bumps act as velcro for food. Scrape them down as you cook! Far more effective than rounded edge flippers. If scraping with your TSS is scraping seasoning off your AUS-ION™ pan too, just apply less pressure. Remember, there are no toxic or synthetic coatings on any of our cookware, so you don't need to worry about scratching or scraping your pans - they're made to be workhorses over many lifetimes, not short-term beauty queens! Seasoning can always be renewed.

What makes the Titanium TSS so special? 

Made from solid 3mm thick Titanium, our Titanium TSS is 40% lighter weight than our ferritic stainless steel version, has similar strength, though is softer for less abrasion on cookware. The titanium also offers ultimate corrosion resistance, is inert and non-toxic.

 

What's the difference between Notify Me, Backorder and Preorder? 

 

In our online store, you may find out of stock products are either 'Notify Me', 'Backorder' or 'Preorder'. 
 

For those products set to 'Notify Me', you can enter your email address to be notified as soon as the product is back in stock. We sometimes only have small batches of stock coming through, so we recommend using the 'notify me' function if you don't want to miss out! There is no commitment to purchase. 

If an item is set to 'Backorder', you can make the purchase and we will send the product to you as soon as it is ready. Please take note of the estimated arrival day. These are our best estimates based on production, though they can change. If there is a significant change in the arrival date, we will email you to let you know. 

Any products set at 'Pre-order' are new products coming to our online store for the first time. You can purchase a pre-order product to secure yours, and like our 'Backorder' option, we will ship your order asap.  Check the ETA arrival date for the item prior to purchasing and we will let you know if any production delays will impact the timely delivery of your order.

Please note, we don't split orders. If you add a 'backorder' or 'pre-order' item to your order, as well as other items that are available to ship now, your order will only ship once the 'backorder/preordered' item is ready. How to redeem a gift voucher
